Masts for sailboats must be strong, straight, not too heavy.
Finding a hardwood tree tall, slim, strong, with no knots is impossible.
By using quarter sawn pieces birdsmouthed together so the edge grain faces out makes it strong.
Note they violated that rule on the reddish piece at the lower right and it's cracked along the grain.
