Re: What have you cooked recently

I baked a loaf of rye bread this past week, been wanting some recently and the stuff on the supermarket shelves is pretty worthless in my opinion. I grew up on Long Island, my folks worked in the city and dad would buy these big loaves of rye from the Jewish bakeries that were really good.

So I found a recipe on the King Arthur Flour website and ordered some of the ingredients from them. This recipe wasn't a sourdough and uses regular yeast but it is a slow rise and not kneaded much. You bake it in a Dutch oven to develop a good crust.

It was really good and I guess I blew any kind of lower carb diet I started this month.

I took some pictures. This one was taken with my Canon R mirrorless camera and a new lens I got from my wife for Christmas, a Lensbaby 56mm Velvet. Gives a sort of dreamy look.

That looks amazing. I'm also reducing carbs but I'll take a corned beef and Swiss please.

Re: What have you cooked recently

Tonight, Scottish shortbread * 2 (first one pictured, doesn't look like that any more, always bake two because first somehow seems to mysteriously evaporate) and a blueberry upside-down pudding kind of a thing/experiment.  pictured fresh out of the oven, was not particularly co-operative in later inversion attempts so maybe renamed blueberry fruit-on-the-bottom pudding.  I was using up blueberries a certain dear relative requested because they really really wanted to make blueberry muffins ...then they didn't :/  Basically blueberries and brown sugar in the bottom of the dish then covered with sponge cake mixture/pound cake batter (I'm bilingual, you know ;) )

Re: What have you cooked recently

That looks so good.  We call that cheeseburger pie, and it's one of my favorites.  What do you call it?

Re: What have you cooked recently

Cheeseburger pie 😁.
It’s from an American recipe I got from Wolf on some other forum.

Looks tasty Limey!!  I made these again.  They looked completely different this time, but I haven't taken pictures   It's a recipe I go back to again and again (bonus shaved Tess in the background)

Re: What have you cooked recently

I made orange chicken again, but I didn't feel like making meatballs, so I just cut it up

Another version of sheet pan breakfast

Slow cooked chicken

Chicken, asparagus, spaetzle, and coleslaw tonight

Last week, I made some fried pork chops.  I didn't use as much oil as I'd like, but I'm trying to be healthy

A while ago (but never posted), I made a pizza with yogurt dough.  Not bad, but could definitely use some improvements

Also - bonus chicken biscuit from an awesome place.  Since it was my birthday, I got bacon and cheese on it.

Last night's dinner: Cod in Parsley sauce with potatoes and peas.  Not very fancy, but yum

just the cooking is a victory, tbh.  i bought a bunch of parsley to tempt myself.  Way too many spuds, but cooking for one.... :/

There are some days that the last thing I want to do is cook.  It's just me, too.  It helps me to cook once or twice a week (depending on the food).  Then, I can just reheat it

that happens sometimes........ I have been known to deliberately cook too many :D

Just as a point of self-congratulation, I also cooked rainbow trout with asparagus and pasta, and an enormous pot of Bol last week, so I was rockin' it :D

(dinner today was pasta-bol with kale :D )
